Mini Corn Dog Muffins
Ingredients

  • 8.5oz pkg. "Jiffy" Corn Muffin Mix
  • 1 egg
  • 1/3 c Milk
  • 1/2 c Palmetto Cheese - Original, Jalapeno, or Bacon
  • 12 Cocktail Smokies (each cut in half)

  1. Preheat oven to 400F
  2. In a mixing bowl, combine corn muffin mix, egg and milk. Stir to combine.
  3. Add Palmetto Cheese and stir, but do not over mix.
  4. Grease a mini muffin pan.
  5. Spoon a Tablespoon of batter into each section.
  6. Top each with a Cocktail Smokie half and lightly press into the batter.
  7. Bake at 400F for 12 minutes or until the muffins are golden brown.
  8. Remove from the pan and top with more Palmetto Cheese.
  9. Serve with hot dog condiments if desired.
