Now the delicious spread can be found in gourmet restaurants as well as your local grocer. It is fast becoming the “Year of Pimento Cheese” as quoted in Bon Appetit and Time Magazine. 1 tub of Palmetto Cheese – The Pimento Cheese with Soul!
1 coconut
1 1b. strawberries
1 apple
1 mango
5 jalapenos, for garnish
Wrap the coconut in a dish towel and with the back side of a chef knife strike the center of the coconut. Most coconuts will have a score mark in the center. Strike the coconut until you hear it crack. Make sure you have a glass to pour out the water from the coconut. Pull apart the two halves of the coconut, wash off any shells and dry off with a paper towel. Set aside.
Slice apple into thin slices. If you’re not serving immediately toss the apple slices with a small amount of lemon juice. This will keep the apples from turning brown. Set aside.
Peel mango and cut into slices. Set aside.
Wash strawberries, cut off tops and slice in half. Set aside.
Fill the coconut halves with one container of Palmetto Cheese. We used Palmetto Cheese with Jalapenos. For assembly, place the coconut filled with pimento cheese on the plate. Place the jalapenos around the coconuts. Add the sliced fruit to the plate and use a spoon to serve.

Palmetto Cheese Stuffed Deviled Eggs
Palmetto Cheese Stuffed Deviled Eggs
6 Tablespoons Palmetto Cheese, Original or Jalapeno
6 eggs, hard boiled
1/4 cup Mayonnaise salt and pepper to taste
Paprika
Variations:
2 Tbsp Bacon, finely chopped or
2 Tbsp Green olives, chopped
Directions:
Cut hard boiled eggs in half, remove yolks and place into a bowl. Place egg whites onto a serving dish. Mash yolks with a fork until fine. Add mayo and mix until incorporated. Add Palmetto Cheese and mix until thoroughly incorporated together. Scoop mixture into a pastry bag or gallon-size food storage bag with one small corner cut off. Pipe mixture onto egg whites. Garnish with a little southern sprinkle of paprika.
Variations:
Add finely chopped olives or bacon to your egg mixture to give your eggs an added flavor.
1 – 12oz tub Palmetto Cheese – The Pimento Cheese with Soul! Original or Jalapeno
1 – 16oz. can Refried Beans
1 – 16oz. jar Picante Sauce
8 oz. Sour Cream
1 – 6.5 oz package Rice-A-Roni (cook as directed)
1 cup Nachos, crushed (We used Sun Chips for ours, but you can use whatever you like)
Ground Beef mixture
1 lb Ground Beef
1 medium onion, medium dice
2 Tbsp chili powder
1 tsp salt
1 tsp pepper
Directions:
Because it takes the longest, you’ll want to make your favorite style of Rice-A-Roni first. Prepare as directed on the box. We prefer the microwave method, but do what works best for you.
In a saute pan, add ground beef and diced onion. When the beef has fully cooked, drain off excess oil. To the pan, add chili powder and salt/pepper. Cook beef mixture on medium heat for an additional 5 minutes and set aside when done.
Assemble:
When your rice has about five minutes left turn your oven to 350 F so it can preheat.
In the bottom of a 13″x9″ baking dish spread out refried beans evenly.
Next you’ll add your cooked rice.
Top the rice with the beef mixture.
Spread Palmetto Cheese over top of the beef mixture.
Pour picante sauce over the cheese.
Top with sour cream and crushed nacho chips.
Bake for 350 for 20-25 minutes. Garnish with chopped cilantro or parsley if you desire.
